History

Mild Ales began in Britain to describe young beer and slowly transformed into a darker coloured ale, lightly hopped, lower in alcohol, yet still very full of flavour. This was the perfect beer to brew in collaboration with Maclean’s Ales as Charles specializes in English Ales. We also used local Fuggle hops from Clear Valley Farms in Nottawa. This is a great session ale with lots of flavour to dissect if need be.

Tasting Notes

A deep rusty brown with red hues and a light off white head. The aromas have a sweet pale malt character with hints of roast and a fruity ale yeast. This full bodied ale has a lot of nutty and caramel notes with touches of roast and a semi-sweet finish.

Dubbel Diamond Belgian Ale

History

The Belgian “Dubbel” was actually just a description used for commercial purposes by Trappist breweries in Belgium. Once upon a time a dubbel or double from different breweries could vary from blonde to brown and have a wide array of bitterness and alcohol. Over time it seemed to be known that a dubbel would refer to a stronger amber to brown ale with a mild bitterness and a focus on caramel malts or candi rock sugar brewed with a Belgian Ale yeast strain.

Tasting Notes

A rusty copper with a rocky white head. The aromas are full of plums, raisins, light banana, melon, and spicy peppery notes from the yeast. The body is full with lots of complex flavours and nuances. There are hints of plum, dates, figs, some clove and spice. Complex but not complicated. A nice candy sweetness that finishes semi-dry.

Pretty River Kolsch-Lagered Ale

History

Pretty River Lagered Ale is a tribute to the Kolsch style of beer brewed in Cologne, Germany. being one of a few traditional all barley malt ales in Country dominated by lagers. It competes with the other top fermenting Alt Beer from Dusseldorf, Germany, a copper coloured ale. The Kolsch It is a straw coloured beer with a noticeable hop presences, yet focusing on the malt character with a subtle fruity palate from the special ale yeast. The beer is fermented cool in comparison to most ales and then lagered at 0oC for an extended period of time to give this ale a refined flavour. The water profile in Collingwood is perfect for brewing this style of beer. This is such a delicate beer and easy bridge to cross into the world of craft beer.

Tasting Notes

This is a straw coloured beer with a tight white head. The aroma has lovely notes of pear, bread, light apple and a subtle noble hop character. The flavour is focused on the grainy malt character with a nice mineral content and with a noticeable hop character to balance this effervescent and dry beer.

Gatekeeper Belgian IPA

History:

Belgian IPA’s are a relatively new creation in the brewing world grasping inspiration from American IPA’s and Double IPA’s while using a Belgian yeast strain. This is an American hop focused beer with esters from the yeast and balanced by the higher alcohol and the dry finish. The Gatekeeper must be respected.

Tasting Notes:

A hazy burnt orange, with a tight white head boasting aromas of lychee, gooseberry, pink grapefruit, orange zest, and an underlying pine note. The body is light, full of bright tropical citrus, peppery notes from the yeast, a little biscuit malt character that finishes sharp and very dry.

Corduroy Rye IPA

A classic style with a twist. This is a full bodied IPA with a hefty addition of hearty rye malt and loads of hops. This beer boasts a rich copper colour with red hues that glow from the glass. The generous addition of rye adds a peppery spiciness that accentuates while balancing the bitterness of the massive citrus and floral aromatics of Summit, Dana, and Wakatu hops. The rye also leaves a dry finish which keeps this complex and bold beer finishing crisp, clean, and irresistible.

Red Sunset Irish Ale

History

While the history of the Irish Red Ale may be a little foggy of it’s exact origins, it stemmed from English ales into the Irish brewing tradition with took on a style of it’s own. The bitterness is lowered and almost tea like, with a lovely sweet body and the addition of roasted barley to give the beer it’s reddish colour and a dry finish

Tasting Notes

A beautiful deep copper with rich red hues and aromas of sweet caramel malts, a slight earthy hop note, and very low esters. The flavour has a wonderful malty sweetness with a herbal hop balanced and a nice drying finish due to the roasted barley. A lovely approachable beer with a lot of character.

Old Baldy Farmhouse Ale

A new spin on a traditional ale. This type of ale was originally brewed for the farmhands as nourishment throughout the long working days of summer. Some farmers would be allotted up to five liters of beer per day. That being said, these beers were generally light in alcohol, but full of flavour. Hops were used as a preservative, which also created a nice pleasant bitterness and floral aroma.

Tasting Notes

This is an unfiltered beer with a hazy golden orange hue, boasting aromas of lemon zest, some lime and light hints of spicy rye. The body is light and effervescent which leaves this drinking easy. There is a nice sweetness from the hearty rye malt and caramelized wheat. The hop flavour is full of lemon and tangerine that finishes clean and very dry.

Rainmaker IPA

This is a big, juicy, highly-hopped, full flavoured beer. This beer was not meant to voyage, it’s meant to be drunk fresh to ensure the big citrusy, piney aroma is as fresh as can be. This beer is one of the ultimate reasons to drink fresh, local, unfiltered, and hand crafted beer!

Tasting Notes

A hazy copper coloured beer with brilliant orange hues and a rich white head. The aroma is big, resiny, sticky, oranges, grapefruit, tangerines, pine, with touches of caramel. The flavour is loaded with citrus, the same resiny, sticky hop flavour, yet a nice malty – caramel background to “balance” the hop bitterness. A full bodied, semi-sweet finish.

Route 26 Brown Ale

This spawns from English style brown ales, however uses all American ingredients. The big difference from most other English style brown ales is that this particular brown ale has a bigger and fuller body with a slightly more assertive hop profile.

Tasting Notes

A rich deep brown with a very deep red hue and a nice off white head. This has nice toasted aroma with lots of nutty and caramel over tones with an underlying resiny hop kick. This has a big body, boasting all of the lovely toasted malts, just a big chewy and nutty ale with a nice bitterness to keep this beer from having any lingering sweetness. Semi-sweet finish.

Three Stage XPA

History

A beer in tribute to Ontario’s best and most challenging XC mountain biking trails. This Xtra Pale Ale has as much flavour as the trail. This is a beautiful blonde ale with a whole lot of late whirlpool hops to keep this as aromatic as possible. With a very light malt character this is meant to be a session ale focusing on the great citrusy character of the hops. The beer at the end of a long trail doesn’t have to be as challenging as the trail but, it should be just as rewarding.

Tasting Notes

A light golden colour with a thick white head this beer has a lot of tropical citrus aromas of pineapple, mango, tangerines, oranges, with light pine. There is an earthy malt sweetness along with lingering lemon and tangerine citrus which keeps this beer refreshing and sessionable with a very dry finish and no lingering bitterness. It really cleans the palate.
